Make the most of sweet summer fruits with this light chicken salad with peaches and pecans! Feta cheese balances it out with a little tang, avocado adds some creaminess, and the pecans give you just a little crunch. We used a Raspberry Vinaigrette, but you can easily make your own dressing or sub it out for your preferred dressing.

4 tbsp. Sugar

2 tbsp. Raspberry Vinaigrette (or salad dressing of choice) – 16 oz, Best Yet Light Raspberry Vinaigrette, Our Price: $0.99, Elsewhere: $2.49
Prep your ingredients: season chicken with salt and pepper on both sides and let rest. Juice 6 of the plums, and set aside. Thinly slice half the onion and set aside. Dice the remaining half of the onion (this will be used to cook the chicken).
Caramelize sliced peaches with 2 tbsp sugar on medium heat in a pan. In a separate pan, cook chicken with diced onions and plum juice. Cut the last plum in half and place in pan and close the lid for 5 minutes.
During this time stir peaches frequently, watching carefully so they do not burn. Once peaches are tender, set aside. Using the same pan, toss in the sliced onions with 2 tbsp of sugar and sauté. At this point, flip the chicken and cook for another 5 minutes.
Once the chicken is cooked, take off the stovetop and let rest for 5-10 minutes. When the onions are transparent, take off the stove.
Slice the avocado, and the chicken. Combine peaches, onions, feta, pecans, avocado and greens in a bowl and toss with dressing. Slice the chicken to top the salad and begin eating. Enjoy!
